Fall is upon us and with the change of season means its time for new cocktail menu. Moving on from the delicious, citrusy, refreshing drinks of the summer to the ever so comforting, warm drinks that remind us of the fall. Although we only select six drinks for our guests to pick from, it comes with great deliberation. Many minds join together to pick only the best recipes and concoctions, all while taking into consideration some of the finer points;

Tasting.

Tasting and testing the drinks is a very important part of the menu. We spend hours, days, weeks, months to find just what we think you are looking for and what you would expect from us at the El Dorado. With out testing what you have prepared you just cant get a good feel for what your selling. We look for balance. Nobody likes a drink that is overly sweetened. Nor does anyone I know like a drink that is ridiculously sour. Some folks prefer to taste the spirit, some like it masked a bit more. Either way the drink should be well balanced.

Research.

Continual research and development is essential for what we do. With so many spirits, mixers and liqueurs on the market there is a lot to choose from. It's easy to get overwhelmed with the variety of products that are available to us. It is essential to be able to differentiate between what is a quality product and what is just good marketing. It's Also very important to know whats hot, whats not, and which of these have lasted the test of time.

Traveling

Traveling from bar to bar, city to city, meeting with fellow bar tenders and friends around the nation. Talking shop, sharing shots and stories with the leaders of this fine industry. It's truly amazing what cocktails others have come up with for their own unique programs. From the awesome bars we visit in LA such as Seven Grand, The Varnish, Coles and Villains Tavern. In San Francisco our dear friends at bars such as 15 Romolo, Wilson and Wilson, and Churchill. To the leaders In New York City at Milk & Honey and Mayahuel.

It all comes down to this. The final product, and one BIG party. Come join us for our Fall Menu Release on September 20th @ 7pm. It promises to be top notch. To thank you for all the support we have received through the years, El Dorado will be bringing together the San Diego community, as well as helping out our friends at Keep-A-Breast!

The fundraiser will be in the back parking lot of El Dorado Cocktail Lounge at the corner of 11th and Broadway in Downtown San Diego. The event will showcase 10-15 local bands, as well as a few of the community's most loved eateries.

The party's theme will have a turn of the century, 1900's Vaudeville theme, featuring tea-stained American flag banners, soft oil-style lighting, and a marching jazz band.

Tonight's Event with DJ Rags and Grandmasta Rats is going to be LEGENDARY!

Dj Rags is a True San Diego Legend. You might catch him out and about week in and week out rockin the big SD or Hollywood night spots but you very rarely get to see the man get to catch wreck and just entirely open up his music selection to pretty much whatever he wants. Well this is one of those rare occasions and you get to see what makes this man a SD LEGEND! From his days on the mix at Z90's Hip Hop Shows alongside Kutfather to programming radio stations and throwing down at some of the most legendary clubs in San Diego like 555 Soul where crowds of Hip Hop heads would come week in and week out to hear the man bogard the tables in the middle of the night at a predominately House night and get open to the Golden Era Hip Hop sound for a quick 30-45 minute set. He will be throwing down just that and more through the course of the night.

Learning to Drink By Family - *Champagne Family Cocktails*

Ahhhhhhhh shiiiiiiiiiit! Nothing like a bubbly cocktail! If only Puff, or is it Diddy? P Diddy? Daddy? Whatever. If only they knew the experience of a well crafted champagne cocktail. They’d probably order bartender service along with those bottles of champagne. Oh, good idea. Trade marked, Bartender Service. Everyone’s going to want it at their table. Anyways, enough hip hop and brilliant ideas.

The champagne cocktail family! These cocktails are usually pretty easy to make, and super fun to drink! The family of cocktails is constructed as follows:

- 1 oz of Gin or Cognac

- 1/2 oz of Lemon

- 1/2 oz Sweetener (usually simple syrup)

- A quick shake

- Strain into a champagne flute and top with Champagne

Bam! Not to tough eh? These cocktails are perfect for parties, relaxing by the beach, or a celebration of any kind! A classic staple Champagne cocktail would definitely have to be the French 75. All this little guy requires is Gin, Lemon, Simple, and Champagne. At El Dorado we use the following specs:

- 1 oz Plymouth Gin

- 1/2 oz of Freshly squeezed lemon

- 1/2 oz of Simple Syrup (1:1 Ratio)

- Shake, Strain, top with the Bubbly

- Garnish with a lemon zest

Now let’s take a look at the history of the Champagne Cocktail. The original champagne cocktail dates back to the mid to late 1800s. In Jerry Thomas’ “The Bar-Tenders Guide,” the recipe calls for shaking all the ingredients, including the champagne. Well they quickly realized that was a mistake as carbonated drinks will explode in your face or over a large crowd at a rap show if you shake them. Here’s his recipe:

- 1/2 teaspoon sugar

- 1 or 2 dashes of bitters

- Lemon peel

- Champagne

Later the recipe called for a lump of sugar with angostura bitters. You would then build the drink in the champagne flute and stir it. From there, the variations began to take off. And now we have the current Champagne Cocktail Family. Here’s an old favorite at El Dorado that you will be sure to love. It’s called the Airmail:

- 1 oz White Rum

- 1/2 oz Freshly squeezed Lime

- 1/2 oz Honey

- Shake, Strain, top with Champagne

There’s plenty of different champagne’s to choose from. We feel that usually the drier champagne’s work best. Brut is always a good call. But hey, it’s your cocktail, experiment! Until next time, Cheers!

One of our biggest events of the year is this Saturday at El Dorado, The Gaslamp Killer! For those who dont know, he is an internationally renown electro/breaks/dubstep DJ who is originally from SD. He has been rocking shows all over the world for years and we are lucky to have him play in an intimate setting like El Dorado (he killed it at Ultra Music Festival in Miami last week!) This party is gonna be buzzin so come early!

Learning to Drink by Family - Collins Family

The first days of April bring many things to us; the change in weather, extra hours of sun, celebrations of all kind, Family Night and cocktails. This week is the Collins family. No, not the Phil Collins and his family.

Im talking about the drink. The Tom Collins is where it all started. This drink traditionally made with Gin was the "cat's meow" in its hay day. Everybody wanted one (or 7). Not to the point where you weren't cool if you didn't have one. But it could only help your situation. On the other hand, it was one of the most refreshing cocktails, and still is. This delicious adult beverage consists of:
- a healthy amount of Gin.
- Fresh lemon juice
- a couple lumps of sugar (or liquid sugar, better know as simple syrup, a.k.a azúcar way)
finished off with some soda water.

I always say "this is one of my Favorite drinks!" but thats not fair. I can't say that about every family of cocktails (even though it's usually true at the time). Really though, this is one of my favorites to make. There are endless variations to this drink and 96% of the time they are all great. Take that standard Tom Collins for example. swap out the soda bubbles for some champagne. WOE! now were talking. I know how you ladies like your champagne, turns out so do the guys. They just don't like to admit it. . Lets be realistic here, you put some Gin, champagne, maybe even some fresh lumps of fruit into any tall glass. you got a winning combination for anybody.

Lets not stop there. Get on in and try a collins with the some Gossling's dark rum, fresh orange juice, a little lemon, a little sugar, an orange garnish. It's called the "Northside Special". By no means is it anything less then special.
